    1.Guidelines for Authors

    Please read the guidelines below then visit the journal’s submission site https://www.sciopen.com/journal/2097-0765 to upload your manuscript.Please note that manuscripts not conforming to these guidelines may be returned.Remember you can log in to the submission site at any time to check on the progress of your paper through the peer review process.

    Only manuscripts of sufficient quality that meet the aims and scope ofFood Science and Human Wellnesswill be reviewed.

    3. Submission Guidelines

    3.1 Types of Paper

    Contributions falling into the following categories will be considered for publication: Original research papers,reviews.

    Research papers -original full-length research papers which have not been published previously,except in a preliminary form.

    Review articles -will be accepted in areas of topical interest,will normally focus on literature published over the previous five years.

    Please ensure that you select the appropriate article type from the list of options when making your submission.Authors contributing to special issues should ensure that they select the special issue article type from this list.

    3.1.1 The research disciplines include

    (1) Food Biochemistry,including basic research on carbohydrates,proteins,fats,enzymes,etc.

    (2) Food Microbiology,including basic research on food microbial physiology and genetics,microbial interactions,etc.

    (3) Food Nutrition and Immunology,including basic research on molecular nutrition,clinical nutrition,bioactive substances,functional evaluation,etc.

    (4) Food Security and Toxicology,including research on safety detection and toxicological evaluation of risk compounds and metals in food products,foodborne diseases,etc.

    3.1.2 Experimental design

    Animal experiments

    When multi-omics approach is used in animal experiments,in vivo non-target metabolomics study of extracts must be conducted,associating WB and PCR of network pharmacology and target organs;or WB and PCR of transcriptomics associating signaling pathways and target organs;or proteomics associating key proteins and their signaling pathways;or non-target metabolomics,proteomics or transcriptomics associating intestinal flora.Priority will be given to 2 or more association studies of transcriptomics,proteomics,drug metabolomics and gut flora in animal experiments with validation of target organ multi-omics predictions.A clear in vivo mechanism of action must be present in the conclusions of animal experiments.

    Cellular experiments

    Articles on cellular experiments should elucidate novel mechanisms,targets,pathway;or use multiple methodologies and pathways to demonstrate mechanisms and targets;or validate different methods in multiple cell lines.Preference will be given to articles that complement animal experiments to elucidate clear in vitro mechanisms of action.

    3.1.3 Contents explicitly excluded from Food Science and Human Wellness (including but not limited to)

    ? The analysis of physiological indicators and chemical indicators,etc.in the field of cultivation,processing,postharvest physiology,and the content of packaging and storage;

    ? The analysis of pure food chemistry,flavor composition analysis,nutrient;

    ? The content of process optimization,partial Chinese medicine,animal nutrition;

    ? The content of META analysis;

    ? Inhibition experiments that do not illustrate the mechanism;

    ? Functional studies or toxicology analysis with specific commercial products;

    ?In vitrostudies on extracts,including GC-MS,HPLC,LC-MS/MS analysis of extracts,total flavonoid and total polyphenol content determination and oxidative correlation analysis;

    ? The isolation and identification of foodborne compounds,in vitrostudies of various enzymes and antioxidants;

    ? Cellular experimental content of compound extracts without clear functional components.

    3.2 Ethics in Publishing

    3.2.1 Plagiarism

    3.2.2 Ethical statements

    Authors should include the following points in the ethical statement (if applicable) when submitting a paper:

    ? The institutional or national research ethics committee/review board that approved the research must be named.Include the approval number/ID if one was given.If the research received a waiver of approval from the ethics committee/review board or did not require approval for some other reason please state this and explain why.

    ? For investigations involvinganimal experimentation,all materials must adhere to high ethical and animal welfare standards.Any use of animals must be based on ethological knowledge and respect for species-specific requirements for health and well-being.A statement indicating that the protocol and procedures employed were ethically reviewed and approved,and the name of the body giving approval,must be included in the Methods section of the manuscript.

    ? For investigations involvinghuman participants:

    o You should state that the research was conducted in accordance with the principles embodied in the Declaration of Helsinki and in accordance with local statutory requirements.

    o You should state that all participants (or their parent or legal guardian in the case of children under 16) gave written informed consent to participate in the study.

    3.2.3 Consent for publication

    If your research or manuscript contains any individual person’s data in any form (including any individual details,images or videos),consent for publication must be obtained from that person,or in the case of children,their parent or legal guardian.All presentations of case reports must have consent for publication.

    3.2.4 Contributor’s publishing agreement

    Before publication we requires the author as the rights holder to sign a Journal Contributor’s Publishing Agreement,and grant Tsinghua University Press a license to publish,including to display,store,copy,and reuse the content.

    3.2.5 Studies in humans and animals

    If the work involves the use of human subjects,the author should ensure that the work described has been carried out in accordance with The Code of Ethics of the World Medical Association(Declaration of Helsinki) for experiments involving humans.The manuscript should be in line with the Recommendations for the Conduct,Reporting,Editing and Publication of Scholarly Work in Medical Journals and aim for the inclusion of representative human populations (sex,age and ethnicity) as per those recommendations.The terms sex and gender should be used correctly.Authors should include a statement in the manuscript that informed consent was obtained for experimentation with human subjects.The privacy rights of human subjects must always be observed.All animal experiments should comply with the ARRIVE guidelines and should be carried out in accordance with the U.K.Animals (Scientific Procedures) Act,1986 and associated guidelines,EU Directive 2010/63/EU for animal experiments,or the National Institutes of Health guide for the care and use of Laboratory animals (NIH Publications No.8023,revised 1978) and the authors should clearly indicate in the manuscript that such guidelines have been followed.The sex of animals must be indicated,and where appropriate,the influence (or association) of sex on the results of the study.

    3.3 Before You Begin

    3.3.1 Conflict of interest

    All authors are requested to disclose any actual or potential conflict of interest including any financial,personal or other relationships with other people or organizations within three years of beginning the submitted work that could inappropriately influence,or be perceived to influence,their work.

    3.3.2 Submission declaration

    Submission of an article implies that the work described has not been published previously (except in the form of an abstract or as part of a published lecture or academic thesis),that it is not under consideration for publication elsewhere,that its publication is approved by all authors and tacitly or explicitly by the responsible authorities where the work was carried out,and that,if accepted,it will not be published elsewhere including electronically in the same form,in English or in any other language,without the written consent of the copyright-holder.

    3.3.3 Changes to authorship

    This policy concerns the addition,deletion,or rearrangement of author names in the authorship of accepted manuscripts:

    Before the accepted manuscript is published in an online issue:

    Requests to add or remove an author,or to rearrange the author names,must be sent to the Journal Manager from the corresponding author of the accepted manuscript and must include: (a) the reason the name should be added or removed,or the author names rearranged and (b) written confirmation (e-mail,fax,letter) from all authors that they agree with the addition,removal or rearrangement,all authors need to sign by hand with an official seal.In the case of addition or removal of authors,this includes confirmation from the author being added or removed.Requests that are not sent by the corresponding author will be forwarded by the Journal Manager to the corresponding author,who must follow the procedure as described above.Note that:(1) Journal Managers will inform the Journal Editors of any such requests and (2) publication of the accepted manuscript in an online issue is suspended until authorship has been agreed.

    After the accepted manuscript is published in an online issue:

    Any requests to add,delete,or rearrange author names in an article published in an online issue will follow the same policies as noted above and result in a corrigendum.

    3.3.4 Role of the funding source

    You are requested to identify who provided financial support for the conduct of the research and/or preparation of the article and to briefly describe the role of the sponsor(s),if any,in study design;in the collection,analysis and interpretation of data;in the writing of the report;and in the decision to submit the paper for publication.If the funding source(s) had no such involvement then this should be stated.

    3.3.5 Language and language services

    3.3.6 Submission

    3.3.7 Additional Information

    Tables and figures may be presented with captions within the main body of the manuscript;if so,figures should additionally be uploaded as high resolution files.

    3.4 Preparation

    3.4.1 Peer review

    Food Science and Human Wellnessonly accepts online submission.A submitted manuscript is initially evaluated by the Managing Editor to check academic misconduct.Considering the research area of the manuscript,it will then be assigned to one of the Associate Editors for evaluation.When a manuscript is considered unqualified for at least one of the following principles,the Associate Editors has the right to reject formal review: 1) on a topic outside the scope of the Journal;2) lacking of originality or technical merit;3) focused on foods or ingredients that are of narrow significance;4) with fragmentary results;5) is poorly written.If a manuscript meets basic requirement,the Associate Editors will then invite at least three independent reviewers with relevant expertise for double-blind peer review.Taking the reviewers’ opinions into consideration,the Associate Editors will evaluate the manuscript comprehensively and then will make a final decision.A Scientific Editor will help make the final decision when necessary.If a manuscript is accepted,the Associate Managing Editor will then be responsible for reviewing the format,English grammar and language of the manuscript before sending it back to authors for revision.

    3.4.2 Use of word processing software

    It is important that the file be saved in the native format of the word processor used.The text should be in single-column format.Keep the layout of the text as simple as possible.Most formatting codes will be removed and replaced on processing the article.In particular,do not use the word processor's options to justify text or to hyphenate words.However,do use bold face,italics,subscripts,superscripts etc.When preparing tables,if you are using a table grid,use only one grid for each individual table and not a grid for each row.If no grid is used,use tabs,not spaces,to align columns.The electronic text should be prepared in a way very similar to that of conventional manuscripts.Note that source files of figures,tables and text graphics will be required whether or not you embed your figures in the text.See also the section on Electronic artwork.

    To avoid unnecessary errors you are strongly advised to use the‘spell-check’ and ‘grammar-check’ functions of your word processor.

    3.5 Article Structure

    Subdivision -numbered sections

    Divide your article into clearly defined and numbered sections.Subsections should be numbered 1.1 (then 1.1.1,1.1.2,...),1.2,etc.(the abstract is not included in section numbering).Use this numbering also for internal cross-referencing: do not just refer to ‘the text’.Any subsection may be given a brief heading.Each heading should appear on its own separate line.

    Abstract

    A concise and factual abstract is required.The abstract should state briefly the purpose of the research,the principal results and major conclusions.An abstract is often presented separately from the article,so it must be able to stand alone.For this reason,References should be avoided,but if essential,then cite the author(s) and year(s).Also,nonstandard or uncommon abbreviations should be avoided,but if essential they must be defined at their first mention in the abstract itself.

    Keywords

    Authors are invited to submit keywords associated with their paper.

    Introduction

    State the objectives of the work and provide an adequate background,avoiding a detailed literature survey or a summary of the results.

    Material and methods

    Provide sufficient detail to allow the work to be reproduced.Methods already published should be indicated by a reference: only relevant modifications should be described.

    Theory/calculation

    A Theory section should extend,not repeat,the background to the article already dealt with in the Introduction and lay the foundation for further work.In contrast,a Calculation section represents a practical development from a theoretical basis.

    Results

    Results should be clear and concise.

    Discussion

    This should explore the significance of the results of the work,not repeat them.A combined Results and Discussion section is often appropriate.Avoid extensive citations and discussion of published literature.

    Conclusions

    The main conclusions of the study may be presented in a short Conclusions section,which may stand alone or form a subsection of a Discussion or Results and Discussion section.

    Supplementary materials

    If there is more than one Supplementary material,they should be identified as S1,S2,etc.For tables and figures: Table S1;Fig.S1,etc.

    Essential title page information

    ?Title.Concise and informative.Titles are often used in information-retrieval systems.Avoid abbreviations and formulae where possible.

    ?Author names and affiliations.Where the family name may be ambiguous (e.g.,a double name),please indicate this clearly.Present the authors’ affiliation addresses (where the actual work was done) below the names.Indicate all affiliations with a lower-case superscript letter immediately after the author's name and in front of the appropriate address.Provide the full postal address of each affiliation,including the country name,and,if available,the e-mail address of each author.

    ?Corresponding author.Clearly indicate who will handle correspondence at all stages of refereeing and publication,also post-publication.Ensure that telephone and fax numbers (with country and area code) are provided in addition to the e-mail address and the complete postal address.Contact details must be kept up to date by the corresponding author.

    ?Present/permanent address.If an author has moved since the work described in the article was done,or was visiting at the time,a “Present address” (or “Permanent address”) may be indicated as a footnote to that author's name.The address at which the author actually did the work must be retained as the main,affiliation address.Superscript Arabic numerals are used for such footnotes.

    Acknowledgements

    Collate acknowledgements in a separate section at the end of the article before the references and do not,therefore,include them on the title page,as a footnote to the title or otherwise.List here those individuals who provided help during the research (e.g.,providing language help,writing assistance or proof reading the article,etc.).

    Follow internationally accepted rules and conventions: use the international system of units (SI).If other quantities are mentioned,give their equivalent in SI.Authors wishing to present a table of nomenclature should do so on the second page of their manuscript.

    Math formulae

    Present simple formulae in the line of normal text where possible and use the solidus (/) instead of a horizontal line for small fractional terms,e.g.,X/Y.In principle,variables are to be presented in italics.Powers of e are often more conveniently denoted by exp.Number consecutively any equations that have to be displayed separately from the text (if referred to explicitly in the text).

    Table footnotes

    Indicate each footnote in a table with a superscript lowercase letter.

    3.6 Artwork

    3.6.1 Formats

    Regardless of the application used,when your electronic artwork is finalized,we recommend authors to ‘Save as’ or convert the images to one of the following formats (note the resolution requirements for line drawings,halftones,and line/halftone combinations given below):

    EPS,EMF,WMF: Vector drawings.

    TIFF: a minimum of 500 dpi is required.

    Please do not:

    ? Supply files that are optimized for screen use (like GIF,BMP,PICT,WPG);the resolution is too low;

    ? Supply files that are too low in resolution;

    ? Submit graphics that are disproportionately large for the content.

    Please make sure that artwork files are in an acceptable format(TIFF,EPS or MS Office files) and with the correct resolution.

    3.6.2 Figure captions

    Figures shall be numbered in Arabic numerals in the order of their appearance in the manuscript.Figures in the paper (coordinate scales,scale values,legends,coordinate title names,units) should be accurate,clear and legible to peer review and typesetting.Figures should be self-explanatory,and should not be repeated with tables and textual representations.The figure provided by the author should preferably be a source file,and it is recommended to use professional drawing software (e.g.Origin) to draw it,and the lines should be clear,uniform,clear and accurate.For functions and spectra,please provide black-and-white vector diagrams (meaning diagrams with constant clarity when zoomed in and out,such as molecular formulae in ChemWindow and diagrams made in Origin).Chromatograms,especially the total ion current chromatogram,should be labeled with peak numbers and correspond to the peak numbers in the table.

    The photos should be clearly legible,and the relevant textual information (e.g.magnification of the electron microscope photos)attached to the photos should be complete and clear.The bands of the electropherogram should be clearly distinguished from the background,and the data corresponding to each band should correspond to each other.

    3.6.3 Tables

    Number tables consecutively in accordance with their appearance in the text,and in should be in the format of a three-line table (auxiliary lines can be added if necessary).Place footnotes to tables below the table body and indicate them with superscript lowercase letters.Avoid vertical rules.Be sparing in the use of tables and ensure that the data presented in tables do not duplicate results described elsewhere in the article.

    3.7 After Acceptance

    If your paper is accepted for publication after peer review,you will first be asked to complete the contributor’s publishing agreement.

    3.7.1 Use of the Digital Object Identifier

    The Digital Object Identifier (DOI) may be used to cite and link to electronic documents.The DOI consists of a unique alphanumeric character string which is assigned to a document by the publisher upon the initial electronic publication.The assigned DOI never changes.Therefore,it is an ideal medium for citing a document,particularly ‘Articles in press’ because they have not yet received their full bibliographic information.The correct format for citing a DOI is shown as follows (example taken from a document in the journal Physics Letters B): doi:10.1016/j.physletb.2010.09.059.

    When you use the DOI to create URL hyperlinks to documents on the web,they are guaranteed never to change.

    3.7.2 Proofs

    One set of page proof (as PDF files) will be sent by e-mail to the corresponding author (if we do not have an e-mail address then paper proofs will be sent by post) or,a link will be provided in the e-mail so that authors can download the files themselves.Significant changes to the article as accepted for publication will only be considered at this stage with permission from the Editor.We will do everything possible to get your article published quickly and accurately -please let us have all your corrections within 48 hours.It is important to ensure that all corrections are sent back to us in one communication: please check carefully before replying,as inclusion of any subsequent corrections cannot be guaranteed.Proofreading is solely your responsibility.Note that editorial office may proceed with the publication of your article if no response is received.
