I wonder when the custom of celebrating birthday with cake spread into China. People now are pretty familiar with the “western-style” cakes. But I need to tell you that most of the cakes we’ve had in the past were not “straight-out”. Then how to define straight-out? In explanation I would like to quote a news headline from People’s Daily Online: Nudists in South Africa are on their tiptoe of expectation to the first “Straight-out” beach destination. Aha, nudity it is! Generally, birthday cake is plastered with thick cream and usually patterned by jelly. It’s just like a lady wears a bloated down coat, with more than that, smoky-eyes make-up. That is way too far from straight-out! Now maybe our loyal reader Mr. Fictitious wants to argue that all cakes are the same and there’s in fact no such thing as “straight-out” cake. Well good argument. But I do know a kind of cake that is pretty “straight-out” and its “straight-out-ness” can be shown from the name: naked cake. Based on our perfect logical definition above, only by its name the naked cake could win the “straight-out” cup prize.
蛋糕是過生日都要吃到的,但是怎樣的蛋糕才算是坦誠的蛋糕?讓我援引一則來自人民網(wǎng)的新聞標題來解釋:南非裸體主義者翹首以待首個“坦誠相見”的沙灘基地。其實所謂的坦誠蛋糕,顧名思義就是不穿衣服嘛。大家過生日時吃的蛋糕外面糊了很厚的一層奶油,上面往往還用果醬一類畫了一系列的圖案。這就相當于一位女士不僅穿了王菲同款棉被式大羽絨服,還化了一臉的煙熏妝,跟“坦誠”是相去甚遠。說到這就有人要問了:“蛋糕不就都那樣,你找個坦誠的給我看看?!边@位虛構的讀者朋友你問得很好,我們還真就知道一種相當坦誠的蛋糕,有名為證:“裸蛋糕”。結合我們剛才對“坦誠”定義的嚴鎮(zhèn)推論,在蛋糕界坦誠大賽中,裸蛋糕僅憑名字就獲得了冠軍。
Of course, it is just a joke about explanation of straight-out and here I apology to People’s Daily Online. However, in some sense, naked cake is indeed a “straighter-out” kind of cake. Because there has no frost or cream on external side, the layers and materials are presented in front of diners without reservation and limitation. This cake is peeling its heart out to show to the diners; in what way can anyone say it is not straight-out enough? Besides, at least we don’t have to worry about sticky hands and cheeks with cream spread all over after enjoy a naked cake.
Speaking of “naked”, this word is more than just a stunt of some kind of cake but also represents some life attitude that is becoming more and more popular nowadays. Architectures along streets are turning from ornamentalism into modernism; the rich replace their Da Vinci Collection furniture with Ming Qing dynasty antique; while pop song lyrics show its evolution from “spring blossom in warm breeze” to “today I don’t feel like doing anything”. No one would like to put on his padded jacket under 30?C weather and it is the same that people are less willing to cover their private life up when pace of life continues to increase. “Clear and nice” now becomes the highest commendatory term of everything. And when it comes to “clear and nice”, nothing fits this description better than a rich-creamy-smelling, sweet big cake with lots of fresh fruits on it, right?
從某種意義上講,裸蛋糕的確是一種更坦誠的蛋糕,因其外層沒有厚重的奶油或糖霜,所以可以最大限度地將蛋糕的層次和材料毫無保留呈現(xiàn)在食客眼前。所需材料往往只有戚風蛋糕,新鮮水果以及夾心用的奶油。作為一個蛋糕,把自己的心都拿出來給食客看了,我們又有什么理由說它不坦誠呢?當然拋開坦誠,至少裸蛋糕沒有吃過之后粘一臉一手奶油的后顧之憂。
再議“裸”字,似乎已經成為當下一種愈發(fā)流行的生活態(tài)度,而并非只是某種蛋糕的噱頭。我們能看到街上的建筑從裝飾主義變?yōu)楝F(xiàn)代主義,富人家的家具從達芬奇變?yōu)榱嗣髑寮揖?,流行樂的歌詞也從“就像花兒開在春風里”變成了“老子明天不上班”。生活節(jié)奏越快人們就越不愿意在生活中去掩飾什么,就像30度的天氣沒人愿意穿棉襖?!巴该鞫篮谩保闪藢θf物最高的褒義詞。說到透明而美好,又有什么會比一個甜的、帶大量鮮艷水果的、散發(fā)著濃郁奶香的大蛋糕更適合這個詞呢。
No one’s able to hold back in front of such kind of lovely “straight-out” cake, including our editors, girls in particular. I can hear their inner voice screaming “Yes! Make it and eat it up!” Therefore, we visited Haoyou’s Workshop for this Vision special report. We planned to experience the process to “straight-out” a cake and eat it up!

面對這樣一種令人敬佩的坦誠的蛋糕,我們編輯部當然不會止步于只瞻仰其高貴的糕格,何況我已經聽到了女編輯們內心“做做做!就做這個!做完吃!”的咆哮聲,所以這期視界專題我們來到了仰慕已久的皓佑手工坊,并將親自體驗坦誠的蛋糕是怎樣煉成的,并將親!自!吃!
以下為裸蛋糕制作過程,本次專題特約顧問皓佑手工坊主理人胡皓佑。
First of all, we need a plain cake, or you can call it the classic way, a chiffon cake.
Haoyou: \"As base of naked cake, just a normal plain cake will do.\"
首先我們需要一個蛋糕坯子,如果文藝一些也可以稱其為“戚風蛋糕”。
皓佑:“用普通的蛋糕坯做裸蛋糕就可以。”
Some fresh fruits.
Haoyou: “The best choice of fruits is those in sweet and sour flavor, which could act as a complementary to the taste of cream. Some bakery use canned fruits, but in my workshop, only fresh fruits are qualified.”
新鮮水果若干。
皓佑:“水果最好是選擇酸甜的,和奶油的味道會有一個互補。有些店家也有用水果罐頭的,但我們堅持只用新鮮水果。”
How to blend the cream is crucial in producing a delicious naked cake. Materials that Haoyou uses are as shown in the photo. According to introduction, these are among the top selection of cream.
Haoyou: “Rum or syrup could be added as needed, and this time I’m putting a little bit of Rum in it.”
要做出好吃的裸蛋糕奶油的調配至關重要,皓佑使用的主要是上圖中的兩種材料。據(jù)說是奶油中的高富帥。
皓佑:“還可以根據(jù)需要略加一些朗姆酒或糖漿,這次我就稍加了一些朗姆酒?!?/p>
Cross cut the plain cake into three layers, plaster cream by layers and put fruit cubes on cream. Plaster cream as shown in photo. The trick is to lay a big bulk of cream in the center of each cake layer as start, then turn the rotary plate slowly while steady pat from top to bottom until all cream is evenly plastered. (Fanita insisted to take a try herself and was forced to stop uglifying the cake before long.)
Haoyou: “Pay extra attention to temperature during the process. Beginner might be too slow to keep cream from melting down in a high temperature.”
將蛋糕坯攔腰斬成三層,逐層涂抹奶油,并擺水果。圖為涂抹奶油,要訣是先將一大坨奶油盛至蛋糕中間,然后邊輕輕轉動轉臺邊從上到下勻速拍打,直至奶油均勻涂滿。(此處倔強的人飯子堅持要嘗試一下,最后做的太丑被我們轟下臺。)
皓佑:“操作過程中要注意溫度,初學者操作較慢,如操作環(huán)境溫度較高奶油有化掉的風險?!?/p>

Haoyou: “Please pay attention to this detail that I turned the top layer of plain cake upside down before stacking it on the very top.”

皓佑:“注意這里有一個細節(jié),我將蛋糕坯頂端的那部分翻過來摞在了上面。”
The finished cake. And the final step is to eat it up. I noticed that my colleagues were swallowing on the sneak.
Haoyou: “See, it is actually not that hard to make a naked cake.”
